Not run very well...hehehe...seriously, it'll have some of the usual gas related issues but they'll only be caused by the piston not traveling up/down smoothly.
In my haste when I had to take everything apart to retrieve the tappet that came out, I tipped the dashpots over & spilled some oil out. I must have forgot to add it back. Added some just now & took her for a drive. It felt like the pulsing was not as noticable but not sure.
I am certain that I am not running lean. Is a lot of black soot at the tailpipe a sign of richness. If it is, I'm a millionaire.
Having no oil in the carbs will affect acceleration and deceleration. The carb pistons will move too quickly and screw up the mixture "curve". You will get stumble on acceleration because the piston will rise so fast that it will send fuel in too quickly.
Yup: pistons will "slam" to the top. Pour whatever oil you use inna crankcase in 'em.
As for the jets: First get 'em level with the tubes and base they ride in, then lower 'em 12 or 13 flats to start. That should be as close as necessary for stock setups. Plug cuts or a ColourTune would be the next step to "tweak" 'em any closer.

And, yup: Sooty black exhaust indicates a "fat" (rich running) condition.
Although the pistns rise faster, that does not mean you will run rich. The choke will be larger, hence the depression wil be reduced, and you're much, much more likely to run very lean.
That's a very common misunderstanding about SUs.
Fall on it's nose. It's felt that way a bit. Also had hard starting but figured I had to adjust the choke cable. When I first got her and pulled the choke to start, reved nice & high & I slowly let it in until warm. I had too remove the manifold & carbs and when I put it all back together, It barely idles when I pull out the choke.
