SU HS2 Piston assy movement-- question

The issue I've worked through is that the two carbs on my first sprite adjusted to the T according to the recommended procedures. ie: 12 flats out, pitch tune them with a piece of fuel line in your ear and you're set.

My current carbs run WAY too lean at 12 flats out, and the back one runs fatter than the front one. I've had them perfectly dialed in according to my colortune tool as far as rich and lean go, but the car just doesn't have the get-up-and-go that the other did. Both engines have good compression and in fact my current car has better and more uniform compression across all four cylinders.

The only difference between the two sets of carbs is that my first Sprite had Grose jets. In fact, I'm tempted to try out another set, but know it's a fruitless endeavour.

So I definitely know what a nuisance it can be trying to get these things buttoned down. Conversely, I know how nice it is to have a set of em that just dials in according to the books. They're painfully simple devices as far as carbs go. But when dealing with age and who knows what sort of neglect/abuse from previous owners, I think anything is possible.
