Dang, I made a gumbo this weekend that was so good that you would <span style="font-weight: bold">slap you mama</span> for it....

Chicken, sausage, gulf shrimp and blue crab.

Still eatin it after 3 days.

First, you gotta make a roux!

It's never really "good" until it sits for at least two days. Then it starts to become great when reheated.
 
When I saw your thread title, Bill, I thought of our favorite seasoning:

This stuff is really fantastic!
 
Oh, and the only gumbo we fix is shrimp and okra, with crab claws thrown in for good measure.

All due respect, of course! :wink:
 
Jerri did the same with some Cajun 15 bean & sausage soup last night....had it again at lunch today, gonna eat it tomorrow for lunch....it gets better every day - & spicier!
 
Our fave pub had some left over from last Tuesday, so I had a big bowl on Friday. Man, that is GOOD!!! They go the okra, crab, shrimp, catfish & alligator sausage route. I have a $150 gift cert to a NO B&B that just may get used this fall.
 
Even at 6AM the idea of some o' Bill's gumbo makes me salivate.

Somehow I now can smell hot, fresh French bread, too...

Oh, I like cornbread okay... just that I MUCH prefer the fresh-baked French bread bro explains is ONLY found around N.O. with a good gumbo.

Cornbread (withOUT sugar) goes with chili.

Oh yeah! Best blend of flavors that I've found.
 
I have a Thai pepper plant or two growin' all the time. Dry 'em out, grind 'em up... all th' spice I need. :thumbsup:

The only french bread in the world worthy of being called French Bread. Otherwise, known as ZIP bread. And when you get a poboy in New Orleans, they always ask if you want it dressed.

Dressed indeed - and it's "mah-nehz", lettuce and tomato, with maybe a pickle, an' 'das it!

Mother's Restaurant on Monday for red beans; Liuzza's on most any other day for shrimp po-boys and Dixie Beer.
