Gumbo weather

Pork gumbo? :shocked:

Smoked PORK sausage. Is there any other kind?

One of the best gumbos I ever ate was down in Galliano, La, where a local Cajun fisherman made a Rock Shrimp and pork salt meat gumbo. It's all in the roux.
 
No gumbo here, but this thread motivated me to toss together a navy bean soup. Cookin' in the oversized crock-pot as I type.
 
It's a bunch of crock I tell ya.

I'm with ya on the roux part, however; if using sausage, the seasoning is all in the sausage if you pick the right one. That's not to say I don't add any, but a good "cajun" or green onion sausage (made in the store, NOT the packages stuff) can season a dish without having to add anything. Makes red beans a snap.
