What's the correct thickness for the Pedal rubber pieces that get glued to the engine side firewall? They seem to act like a Bumper & Seal.

First off they do not get glued to the engine side of the firewall, they are mounted onto the steel pedal flanges that will come to rest on the engine side of the toeboard, basically covering the pedal holes. They are about 1/2" thick and will tend to compress a bit over time. Their presence will have to be taken into account when adjusting both brake and clutch free length when at rest.
