Hey Tyrone,
Per Anderson/Moment's book, on a black car the dash would have been painted body color with raised instrument panel a non reflective silver. They do note that a few owners of original unrestored cars believe the instrument panel was body color. If yours is original and never been painted, maybe you have one of the ones with a solid color dash. From a restoration point of view, I would go with the two tone since that was the usual case. Like you, I think the two tone looks far better.

FWIW, my dad carefully took the dash on our 100M down to bare metal and found no evidence of any silver paint (white/black car). It also seems we had one of the cars that had parts of the chassis--inc. the engine bay--painted black.
