I've read the manual, but this one has got me, mostly because the instructions weren't really written for my BJ8!?? The matter of it being written for RHD doesn't bother me, but my mounting bracket is welded to the bulkhead, not bolted" That said my real question is simple:

Do I have to remove the wiper rack with the motor or is there a technique for disconnecting the rack from the motor while it is still in the car?

If the rack must come out is it best to disassemble everything from under the dash or am I better off just removing the chromed nuts on top of the cowling and letting it all come out?

what Dave says is correct, but it is not even necessary to undo the rack tube nut. Just remove the cover, carefully remove the circlip and park wiper if there is one and lift off the link. The motor unit can then be unbolted from the car body and slipped off the end of the rack tube.
The alternative but more fiddly and messy way is to undo the rack tube nut, unbolt the motor from the body and pull it and the rack out as one. You will have to remove the wiper arms to do this.

It's off and on my bench. Thank you for your help.

After I remove the 15lbs of extra grease (a little exageration) that the PO smeared on the park switch, I suspect the motor will work just fine. The grease was soooo thick that it wouldn't allow the contact to touch the copper plate it is supposed to drag across hence the wipers would "park" where the the grease was thick.
