I was actually thinking about doing that last week for pieces around 3" diameter or less .

Pah! child's play. I'm surprised he used chisels and not his teeth! FWIW on another board I frequent, they were discussing doing this to refinish (and modify!) rims. Oh, and Red Green & I used to live in the same town. Never met him but a colleague's son was on his show.
