Wheel cylinder installation kit

I'm replacing the two wheel cylinders on the rear wheels of my BJ8. I purchased the fitting kit from Moss Motors and it came with a foil pouch (grease, I assume) and rubber dust covers. When I purchasd my car, no dust covers were in place.

Can anyone please advise on what the grease is for? Also, in what order are the parts installed? My guess would be:
1) wheel cylinder and handbrake lever
2) dust cover
3) cylinder-retaining shims ....?

The grease pouch should say something like 'mechanical grease' and is used in the rectangular slot for the wheel cylinder. The wheel cylinder has to move somewhat freely in the slot to center itself. The cylinder will be in a slightly different position when hydraulic pressure is applied than when the handbrake is applied. If you bought the repro cylinders then they should fit in the slot just fine. If you bought the more expensive 'OEM' cylinders then you will have to file them down a bit.
Here is how I assemble the retainers and Lever: #1: Install the cylinder onto the backing plate. #2: Install the larger u-shaped retainer from the handbrake lever side. #3: Now install the handbrake lever (it will fit under the slot) #4: Fit the smaller retainer under the larger one and mesh the teeth. #5: The dust boot will now fit under the larger retainer.
Note: Sometimes there is a third u-shaped retainer that is smaller and very thin. It goes furthest out but with these latest issue cylinders I haven't been able to get them in place. They will fit original Girling cylinders. I probably left something out but I will add to this post if I think of something else.
 
I use Red Rubber grease in the rubber dust cover and on the junction of the brake lining and the piston. What colour is the grease in the pouch
