Don, puddin (and not pudding) IS meat.
It's the organs of a hog ground up and boiled in a big iron kettle, then drained and poured into plastic tubs to cool. It's then fried and served with pancakes or eggs.
The broth that is drained is reserved and used to make the pon haus, also called scrapple. Cornmeal, white flour, salt, black pepper, and red pepper are mixed with the broth and boiled in an iron kettle, then poured into plastic tubs. It is then sliced and fried and eaten with syrup or served with eggs.
