We have a 50+ year old Apple tree,& an 80+ year old Cherry tree
that need to get cut down,due to infestations.
Can someone tell me how much of a stump that we need to leave,
to have them professionally removed?
We're donating the wood to a local place (Blue Ox Millworks),that
helps troubled kids,& makes building stuff by hand.Look it up on the internet.
I've cut as much as I can by hand.I'm going to rent a chainsaw,&
cut them down (hopefully) tomorrow.
Help me Mr. Wizard!

Not an expert by any stretch of the imagination, but, given that you are doing the rest yourself, why not rent a stump grinder. (Battlefield has them) In which case you would cut as low as you could.
 
Doug it depends what is being used to remove them. If its a backhoe or excavator it really doesn't matter. If you are having the stumps ground then take them as low as you safely can. Just remember if they are ground the rest of the stump is still in the ground, after a few years it will rot and you will have a hole. As a used to be small boat builder I would say that you should try to save all the "knees" that you find on the trees. This is where the branch has turned and the result is a section that resembles a knee. You end up with a piece that has grain that follows the bend.
