When installing the plastic finishing trim around the inside of the windshield, should it be glued in place or is it held in place by the windshield rubber?

No glue. Inserted mine in the rubber seal's groove with the assist of two helpers as the seal and windshield glass was being installed in the frame.
 
So Eyesie, you mentioned the "inside" of the windshield. There is no plastic finishing trim on the inside of the windshield. It is on the outside of the windshield. A small silvery plastic strip that pushes into a groove. No glue needed, but if you are putting it inside, you have the Windshield mounting rubber in backwards.
 
When I read this I thought he meant the vinyl that surrounds the windscreen frame on the inside. When I r&r'ed my windscreen glass and fit a new seal that trim did not move. I can't say if it was glued but it was certainly stuck where it was. I am quite sure that it was (and still is) original to the car.

As for the 'chrome' trim on the outside of the rubber seal, yeah it just goes in the groove. There are tools to assist this. If that is what you are doing you may want to leave it with some excess for a few months as it will shrink to the point where that little cap may no longer cover the gap.
 
So if you ARE referring to the vinyl trim on the inside of the windshield, I glued mine down. Seems pretty senseless to try to put that vinyl trim in place as you place the windshield rubber or after the windshield is in place. When I removed the old vinyl it was glued down. The windshield rubber will just hold it down that much better. But you don't always have that much trim to tuck under the rubber.
