Are the rear brake shoes removed by pulling the shoes off the adjuster and cyl slots with the return springs still attached?

In a word, "yes."

They're put back that way too. Assemble the pair with the springs, lift 'em up there and wiggle/pry 'em back into their slots.
 
:iagree: I find it easier to take them off the adjuster first; and back on the adjuster last.
Of course, if you have the type with the hold-down springs, they have to come off before the shoes.
