Drop a big block in it (JK). I'm not familiar with the Toyota gearbox, but 5th is likely an 'overdrive' gear, possibly with a substantially raised ratio (ODs are either 22% or 28% engine speed reduction/speed increase in Healeys). Assuming your engine is in top nick, the taller rear end combined with a steep OD gear is likely causing your issue; all you can do is live with it--drop to a lower gear on grades and/or kick the OD out--or put a 3.9:1 diff (back) in. My BJ8 with stock gearbox and 3.54 diff lost a little acceleration, and probably some pulling capability on grades, but is much more pleasant at highway speeds (a fair trade IMO). I do kick the OD out and/or shift to a lower gear on steeper grades, esp. with a passenger and baggage for two.

Your BN6 engine doesn't have enough torque for these high gear ratios. You have a few choices:
downshift as suggested
replace the 3.54 rear end with a 3.9 rear end. You could probably trade that 3.54 differential for a 3.9 and make some money because of the relative desirability of the 3.54 to those who have 3000s.
replace the 2.6L 100-6 engine with a later 3000 engine.
