I was thinking of having some sort of bimini top made for the car, kinda like what you see with Jeeps. I figure with the front snaps, the roll bar, and the attachment points for the hood, it should be a pretty easy project. Just wondering if anyone here has tried such a project, may have some tips.

A few people in our AH club have "bimini" tops - 2 Bugeyes and a Big Healey. A local upholstery shop made them and relied on the existing fasteners (i.e., windshield and rear deck). They utilize part of the top frame as well.
 
Thats what I was thinking too, I'll have to head down to the upholstery shop and see what he can fab up. I did see the one from bugeyeguy, figure use of the roll bar would work the same, and be far more attractive. My lady and I are looking forward to some road trips this year, but she had photosensitive epilepsy, so keeping the sun off her is crucial.
 
Another possibility is to get a soft top with a zip-out rear window. I had one on my MGB, and it was great in the summer. Roll the windows down and zip down the rear window and lots of flow through without the blazing sun. I think I've seen such tops for a Bugeye, but I can't remember.
 
Was it LoTo or Midget 50 that one of our, I think, regular contributors had a great one that his wife made for there Bug Eye. Don't remember who right now....

Jeff Kelley (sp?) has a Bimini on his Sprite. He was at LoTO and IIRC at Elkhart Lake too
 
Easy to make a non driveable one out of a big sheet .. of cotton and some string and grommets.
 
Affixing the top around a rollbar should be "fairly" simple - either snaps, velcro, a zipper, or a combination thereof. You might find a less-expensive alternative by going to a marine upholstery shop - the shops specializing in autos might be a little more $$$
