I seem to be adding oil to my SU carbs too often.

How do you establish the need to add oil? If the damper is working, and you can test by lifting the piston, you don't need oil.
Remember, as arson as you start up after filling, surplus oil will be lost.

The level of oil should only get to the top of the piston's oil chamber, not filled to the top of the whole tube. And account for the displacement of the brass dampers' volume as well. Any oil beyond the top of the piston's chamber tube will get sucked into the intake.
