I passed through Ville Platte, LA, this afternoon and stopped by one of my favorite Cajun butcher shops for a little Tasso (smoked pork for seasoning) when I found this beautiful Smoked Ponce! I couldn't pass it up. Basically it is a pigs stomach stuffed with sausage mix, and sewed up like a little football. Put it in a Dutch oven (yeah, Cajuns call it a "Dutch" oven) with a little water, some vegetables and maybe a little rice, and cook for a long time on a slow fire. Slap Yo Mama......
