What I do : drive the car as much as possible. If there is a problem, fix it. Then drive some more.
IMO the fuel problems, while real, aren't nearly as bad as some say. My TR3 is sitting outdoors (even in the recent rain storms) and won't be driven for a few weeks (the OD is spread across my workbench). But when I get the OD back in, I'll bet it fires right up and runs fine.
Remember, the stuff actually burns even after phase separation. Pay a little attention to what the engine tells you about mixture, and you can drive on the separated ethanol/water just fine (until the water percentage gets to be too high, which won't happen because it's no longer exposed to the air).
Long time ago, I actually bought a gallon of denatured alcohol, hooked it up gravity feed, and drove around on it. Disconnected the jet return springs and pulled the jets down until the mixture was right. Maybe a little less power on tap, but it ran just fine.
One other data point: The fuel tank on my LBC support vehicle had to be repaired recently. I pumped the remaining fuel into the wife's car, and then after it was reinstalled, poured in a couple of gallons from my lawnmower (sealed) can that had to be at least 3 years old (last time I mowed the yard). Ran just fine.
