For the stock carbs, I would tend to agree with you, but only if the linkage had been maintained and there was no binding or wear caused from lack of lubrication. Sadly, most 30-40 year old cars have not been taken care of in the proper manner, thus the problems inherent with owning them.
For the triple carb setup there is no comparison in smoothness of pedal effort and response. I tried both ways and I know it to be true, even with a reconditioned linkage setup.
