Hi,

What's the best, easiest way of removing the old gear on the starter and replace it with a new. After a brief look at the gear I think that I will save myself a lot of trouble and ask before I start the work.

This is a two part operation. First you have to remove the drive assembly. That is the pain in the neck part of the operation. You have to compress the spring to obtain access to the clip or pin holding the drive to the shaft. At work here, we just put the whole starter in an arbor press. You might be able to use a vise by just putting the drive assembly between the jaws and compressing the spring.
Once the drive is off, you can disassemble it. It has a screw type mechanism in it. Just watch the order of the parts as you take the drive apart.
