I don't know French, but in the beginning of the film, the note says something like "The film has not been speeded up nor were camera tricks of any kind used." according to my video tape version.

However, you are correct, the sound dubbed in is from a Ferrari, not the Mercedes used for shooting the film.

Yes, the sound was dubbed. You can see from the other vehicles on the road that it was not altered in terms of speed.
