It's been a while. Can you give us an update on the rust in the cooling jacket and your decision to fit a replacement cylinder head?
 
Hi! Well, we replaced the head and cleaned out the block and in doing all of this, a small rubber ring got damaged on the carburetor. So, it was leaking gas onto the exhaust. Woo. Well, we fixed that and now it's... drivable. ish. I'll post my issue in a separate post so I can pull ideas from other people as well.
 
Oh yeah, and it was still overheating just a little when driving through the city on an 80 degree day without the supplementary electric fan running. But it never got bad enough that we felt we needed to turn the fan on, but I don't get why after replacing the head, cleaning out the block, putting on a high pressure water pump and putting in a super 2 core radiator why it would overheat at all.
 
What thermostat are your running?

I would think 180F would be fine....but I would not go any higher.
While not technically a "fix", a 165F thermostat might give you a bit more "cushion" in terms of hot-running.

Also, check your coolant mix.....no more than 50% anti-freeze. Anti-freeze does not reject heat as well as water, so if you run too much of it in the ratio, the car may run hot.
