The Fish (Schindleria Praematurus) by Yes is absolutely mind boggling while wearing stereo headphones. For that matter, the whole Fragile album is pretty insane in that department.
Speaking of stereo - take a listen to this 1932 recording of Duke Ellington.
Interesting back story. It's an "accidental" stereo recording, where the Victor studio had two recording turntables with separate microphones set up in different spots in the studio. One was the backup, in case the other turntable failed.
Wasn't until 1985 that someone found both recordings, played them back simultaneously, and found it to be "binaural" - similar to stereophonic.
I remember first hearing the story (and the recording) on NPR back in 1985, driving home from work. I raced home to record the second broadcast to my trusty cassette recorder.
