I am thinking of surprising my wife with a classic, on a budget! The choices in front of me are of equal cost: 1980 Spitfire or a 1973 GT6 MKIII. Which would be the more reliable, easy to maintain, cheap to insure/operate vehicle, assuming equally good condition up front, and why?

This would be a stretch but she deserves it.

Maybe look for MG Midget or Austin Healey Sprite a little cheaper

Newer Spitfire, newer MG Midget or newer MGB are all good choices for first timer.
 
Allow me to address the specific question you asked. You stated that there were two choices in front of you - a Spitfire (4 cyl convertible) and a GT6 (a 6 cyl coupe). You also said to assume equal condition up front. First, I'd consider whether your wife (who you say the car is for) would prefer a hard top or a convertible. I know my own wife would choose the convertible hands down. Also, the Spitfire is a newer car, so all else being equal, probably less chance of major things going wrong than with the GT6 which is 7 years older. Really thought, I'd try to get a feel for how your wife would feel about a little convertible versus a slightly faster coupe. I have a Spitfire and, while it certainly isn't the fasted car in the world, there is something about a tight little rag-top on a mountain road that just can't be achieved in any coupe (and I have a coupe sports car as well!). I know I didn't really answer your question, but I guess I'm leaning toward the Spitfire for an all around fun car that would be easy to maintain and "relatively" inexpensive.
