Mmmm..shepherd's pie

I'm making shepherd's pie tonight! I use a very simple recipe. I roast a roast, let it cool, grind it in my meat grinder, grind an onion in the meat grinder, combine the two with some salt and pepper, make some mashed potatoes, line a glass pie plate with the potatoes, add the meat, and then add the top "crust" using more mashed potatoes. I then let it rest in the fridge, and then before dinner, I brush milk on the top of the crust and bake until the potato gets nice and toasty. Mmmmm.

Anyone care to share a recipe?
 
:yesnod: I make this pie but use ground beef and layer the meat with corn in the center and then the potatoes on the top. Real comfort food. Used to be able to get it a local restaurant to go when I was a kid. Mom would put a wet towel on the top and bake in the oven before serving. Long time ago...
 
Haven't had that in a while, so before it gets too hot around here and we are force fed salads...

Technically speaking, using ground beef makes it a cottage pie. Shepherd's pie is made using lamb, coarsely ground. :wink:

A common twist in the UK is to add peas and chopped carrots to the meat before covering it with potato, and/or to grate a sharp cheddar cheese on the top of the potato, bake and then broil for a minute or two tops, to get a slight crust of cheese on top of the pie.

My wife does not like the pie made with lamb, and so I usually bake two pies, one with lamb, the other with beef. Amazing the difference, once the meat has been browned, in the residual fat left in the respective pans. The beef leaves a lot more than the lamb.

We're using beef because we bought a side of beef from a family friend who is an organic farmer. Best darn beef we've ever had, but there's still a bit left in the freezer and we're on an all-beef binge to make room for the half side we committed to buy for this year! Hmmm, maybe I better make *two* pies.....

Oh yeah.....now you're talkin'.

We had corned beef and cabbage for St. Patty's day, and I was very careful to save some of the corned beef. Chopped it up, along with some diced potatoes for breakfast last weekend -- you guessed it, corned beef hash.

Given our over-abundance of beef, I'm planning on pickling my own corned beef. I just have to pick up some salt peter at the pharmacy, and I'm good to go.
 
I remember "Reuben" sammiges, all ingredients were "home-made".

The British (especially the Scots!): how could such great people eat such awful food???

I guess that's what makes 'em so tough!
