Michael J.: I do not have anything in the manuals on the MKs about the sunroofs. I do know on the XJ6 series 1-3 the sunroofs come out through the top (did this on a leaking seal). You have to open it a little and look for fasteners along the rail and then slowly pull the roof forward and unfasten the rear ( 2 people would be best). I can't give any other advice until I see one ( rare here), but I do not think Jag changed them much except for the electrics. Worst case pull headliner. If there is trim around the inside roof for the sunroof maybe pull trim an use a light and look around. Sorry I cannot help any better than that.
