I used to live across the road from a large farm field of Brussel sprouts.
We were always searching for bargains.
After the farmer did the harvest we went up and down the rows picking up the stragglers.
Even heavily smothered in garlic and spices they were not worth eating.

They need to be caramelized by being sauteed to destroy the bitter compounds. I hated them for years because my Mom and wife would boil/steam them. Then a somehow-related chef sauteed them and then added reduced balsamic vinegar and served them at a Thanksgiving dinner. I was amazed at the difference.

split in half and roasted in the oven and covered with melted Parmesan cheese. Same with broccoli. Staples of a Ketogenic diet.

When I grow my own, I don't pick them until after the first frost. They taste much better then.
