When my '78 was on the street, I installed a thinner (old Sprite) driver's seat and I shortened the steering column quite a bit (did away with the steering wheel key-interlock at the same time).
Also put in a smaller diameter steering wheel.
These things made a big difference (I'm 6'1" and around 210).
