How many hides?

I did a search but did not get the results I was looking for.

Would anyone know how many leather hides or square footage are required to do a TR3A with the jump seat?

While the interior install is months away, it's much too cold in the garage right now and want something to do in the WARM basement.

Also, I'd like some recommendations of leather suppliers and what to look for in hides,

I can't help you on that but I do know that I had my previous TR6 seats done in real leather. A soft, tan leather that felt like heaven when you sat on them. Recommend it highly, if you aren't too worried about concours.

Can't you buy the leather option from the Big 3, in their trim packages?

Do you have experience and the proper equipment to do this work? I don't believe a standard sewing machine is powerful enough to complete the job. You have to sew through four layers, the connecting pieces and the vinyl ends that wrap around the trim beading. If you are going for an original look, you must also sew a backing material to the top surfaces to allow for the foam padding that gives the seats the raised textured look.
I have talked to Larry Learn several times about making stock seats from scratch. He has done many many Triumph seats over the years and says that he can not duplicate the work from the factory. His work is excellent, but he says this because he is a perfectionist.
Are you putting leather on just the top surfaces as original or doing everything?
From what I understand, you don't look for anything when buying a hide, you get what they send you. I don't think some of the belly hide is usable because of strength issues. I think one large hide will do all top surfaces.
