hold the front subframe in place and do I need to disconnect the rack first

You'd think that would be an easy question. Depending on the age of the car there will be one or two bolts on each "tower" where the subframe bolts up underneath the bulkhead.

Moving downward, I only remember each side having one 5/16" bolt holding the bottom, rear tabs to the passenger compartment floor.

At the front, there may be large bolts or tow-eyes through the subframe securing it to the front panel. Any other bits to be removed shouldn't be structural, but functional mounts for things like brake lines and wiring clips.

The steering rack is bolted to the passenger compartment floor with U-bolts. I think you'll find in the manuals they talk about lowering the subframe to remove the rack, not removing the rack to remove the subframe.
