Uh, cuz..

Use that old timer Greek's assimilation of physics. Leverage.....

When the flywheel is mounted on the crankshaft you have those pointy little things full circumference(hopefully) called ring gear teeth. You can install a long bolt, or stud where you can apply some kind of lever(long screwdriver, prybar(VW/Honda/Acura flywheel hold tool) to keep the flywheel from turning as you are using a breaker bar to remove the flywheel bolts...

Just a quick note on removing the flywheel. If you remove the clutch pressure plate, you can stick a 1/4" x 3" (or so) bolt through one of the clutch holes from the rear, and stick it through where the starter goes in the engine plate. Holds it perfectly. I've also found you can get plenty of leverage with a normal wrench by lying on your back under the car, reaching the wrench up to the flywheel bolts, otherwise can be pretty awkward!
 
One of the advantages of Rick Patton's Fan Eliminator kit is it gives you a great way turn the engine over or to keep the engine from turning over when you need to remove something like the flywheel...... This even works when the engine is in the car.
