As I understand it, the "dumb Pole" jokes come from the early stages of WW II when the Germans invaded Poland. All the people had to fight the army with was pitchforks and shovels so that's what they did. At least they fought back. Once I learned this, those jokes weren't funny any more.

Some interesting films dealing with life in France during the WW2:
from Criterion: Army of Shadows follows a small group of Resistance fighters as they move between safe houses, work with the Allied militaries, kill informers, and attempt to evade the capture and execution that they know is their most likely fate.[1] While portraying its characters as heroic, the film presents a bleak, unromantic view of the Resistance.
And "Le Rafle" (the Round up) - Collaboration, Resistance, and the horrors of Nazi occupied France, anti-semitic laws, and eventual deportation to the Camps.
