You'll be able to stay in some interesting places, if you like.
There are various castles that let rooms to paying guests- a web search can turn them up.
There's also the National Trust- which has a great list of Historical and interesting sites and does have some with accomodation, mostly cottages and bed and breakfasts.
There's also the National Trust for Scotland with its own historic properties and some accomodation - castles and cottage as in England and Wales but also some more unusual ones-

And I seem to recall that they at one time had rooms in a "folly", the Pineapple.
There are just too many places to visit and things to do...
Some suggestions:
York: a great place to visit with the Minster and the surrounding medieval precinct the Shambles which has become a pretty touristy shopping area but still worth a visit.

Edinburgh: Also a great place to visit. The Castle of course, and other things but also Rosslyn Chapel- its small but very ornate.

And if you can find the time and good weather, a drive up the coast road to Oban or St Williams or even Skye....
And the obligatory visit to a Scottish distillery.
If you could visit Chester on the way back down, it like York is an old walled city with a medieval shopping area.
A drive along the North Wales coast to Anglesy is also nice, with opportunities to see Caernarvon Castle (among others) and various Welsh tourist sites (Llandudno, Portmerion, Slate mines, Snowdonia, etc.).
So much to see and do and so very little time...
