By the way... my last job I worked for a company in Calgary.
 
Strike up a personal friendship with the owner of the company. he may keep a small cottage industry going for the local crew.
I've made beef jerky in my dehydrator before. I can't bring myself to buy it. It's just ridiculous expensive, but it's one of my favorites, and it's sooo easy to make. The trick is in the cut of meat, and your marinade. Maybe you could get the recipe for their marinade...but usually that's a jerky makers most closely guarded secret.
