Ya beat me to it... I was gonna suggest; Buy a jar of olives, then just suck out the pimentos. Just make sure to rinse 'em good before using them.

For a while, when I was motivated and very much gourmet`, It was fun to buy them fresh from the grocery store, roast them over a flame, clean out the pits and stuff. cut them into long strips, and put them up in various salad dressing type concoctions.
Good enough to just eat out of the jar, faster than I could maintain a supply. First ones were picked fresh and donated by a friend who did a bit of organic gardening. She told me what to do with them and was an instant fan of something I never knew anything about.

Umm.... I grew up in and around families with Italian sirnames, Steve. Roasted peppers of ALL varieties was a diet staple. I'm stunned!

My bride normally has exquisite taste. (Hey - she married ME! :smirk: ) But she won't eat anything with pimentos.

I love 'em! 'Specially teamed with cheddar!

Just now opened a jar of Peruvian Piquillo Peppers. Good G_d, I will from here on out throw rocks at those pesky Pimentos.

Not my family, we were forced to eat mostly American crap. I couldn't even be in the same house where garlic, peppers or onion was used. After I left, I grew up fast and became the best darn Italian cook in the world. For years, I would invite friends over for dinner and the crowds that showed up were incredible and I always cooked enough to serve an army. Now I can't eat like that anymore. I won't even go out to friends because I can't say no to good food. Someday, if I can break below the 200 lb mark I might change. Right now I just feel like a pig. Back to eating bland crap so I don't gorge.

Then stay away from the fresh artichoke/garlic bread in Pescadero. --elrey

Sir!!! May I please have another?
