dWhen to Use Gasket Sealers?

I had the intake/exhaust manifolds cleaned/bead blasted.
Is there a list of when/when not to use sealers?
Could someone make me a list?

For manifolds like that I will often use the "copper spray a gasket" by permatex I figure it will help seal any small imperfections. I have been told that cheap silver spray paint will work, but I like the copper stuff.
 
For the pan on my 4.0 block I was told by a couple of parts brokers that I should use "the right stuff" in lieu of a gasket
