I am in the process of checking on the mounting of the tub to the frame and I noticed that one of the screws on the striker plate is striped, how do I fix this?

I believe that all four screws fit into a single plate with the four holes. One method is to find a slightly larger screw and tap a new set of threads. Finding a screw for this will be the big job but the original is a 1/4" so maybe even a metric could work.
 
The plate is removable by lifting an edge of its capsule, after which it can be duplicated or repaired. They also make screws with #6 heads and #8 threads. The hardware bin at some Ace or TruValue will have them.

This! You have to go in through the hole behind, which is normally covered by the quarter trim panel. You have to pry the tab back on the retaining plate to access the nut plate. The chromed screws are available from the big three.
 
try and re- tape it with the correct tape ( it is standard thread) and see if you can a little bit of threads back. You have 4 on that little thing and one being a little weak will be fine and you might get all the threads back and it will be strong. If that does not do it and you cannot live with 3, I would go John’s way.
 
if you have access to the back and the screw goes all the way through. Thread a nut on the back and tack weld it to the plate. clean up the metal first before trying to weld it.
