Actually you purists will be disgusted with me, but I cheated (mid-week meals being what they are) and used a packet. Added chicken, andouille sausage and shrimp, plus rice myself, though. It was pretty good.
 
Some of those "prefabs" actually aren't that bad.

However, should you want a proper recipe, let me know. :wink:

Oh, and by the way, "There's gumbo, and then there's MY gumbo" is the norm for Louisiana cooking. But it's all good!
