After a day of trying to get a consistent idle, I'm pretty sure the throttle shafts are worn. Is there a good way to verify this? Any recommendations on shops that specializes on these carbs?
 
Spray starting fluid or carb cleaner around the shaft bushings, while the engine is running. Any change in engine speed could indicate wear.
 
+1 on Joe Curto. If you are comfortable with rebuilding most of it yourself, Joe can rebush the carbs/install new throttle shafts quite quickly. He can do everything else too but he has a backlog of work. Made a big difference for my TR4.
 
There are at least a couple shops in Sac and the Bay that will rebush the throttles. Machine shop can as well is new shafts don't take care of it. Nothing wrong with having them rebuilt for you, but pretty easy job after the shafts are correct as well.
 
It probably is worn throttle shafts but try not to overlook the possibility of only needing new shafts (and not re-bushing). While this was the CDSE150's on my GT6 and not your 175's, just installing new shafts took care of my uneven idle problem.
