All the companies these days make a good digital SLR, don't forget that other than the big two there is Sony, Olympus and Pentax, all very good camera systems... One advantage for some with the Pentax is that they can use many old manual focus lenses on it, some of my friends more in the artistic realm of photography use that to their advantage.
And what camera system you purchase can depend on what kind of things she might normally photograph, as each company has certain tendencies, if you live near a large city (with a proper camera store) go do a little shopping and ask lots of questions...
