My 3 sons are coming home for Thanksgiving holiday so I am cooking. Today, I made a giant TR6BILL everything-but-the-kitchen-sink gumbo. The sad thing is I had to resort to using oysters from Washington State! At least they weren't Chinese. Our famous Louisiana oyster beds aren't up and running yet. (Thanks, BP) The oysters were just as good, a little gamey. When I make a gumbo, I put everything in it: hen, crab, shrimp (bartered, if ya'll remember), andouille (sausage) and oysters. Even if they are from Washington. Geaux Saints.....



Interestingly, I went to a gumbo cookoff festival over the weekend. Dang, I should enter next year. A lot of dishwater, if you will. The true champs weren't there this year.....
 
Janet and I should enter also! But then, we're Gumbo "purists", and would probably be outdone.

How do you know? I don't recollect hearing one speak.
 
Actually, they were Goose Point oysters from Washington state. The containers said they were <span style="font-style: italic">extra small</span>. One was a real choker..... Huge, if you will. And they spoke Washingtonian......
 
I try to never get any seafood from China. Actually anything else too but that's a whole lot harder. Good on ya for that gumbo, BTW.
 
Well, local CHinses rest has crawfish. They can't be local and MAN are they good. I'm with ya though. I don't eat nothin' further than about 50 miles or so. Then again, I'm spoiled. Only exception in Dungeness crab.

Poor crab, been in prison all it's life only to be eaten. :jester:
