On the Today Show I just saw Al Roker at Cafe du Monde in New Orleans. He was talking with the owner and one of the cooks.

Can't take my mind off these - Haven't had Cafe du Monde coffee and beignets in many years, but man are they good!

Well, to make you feel better ... beignets are made from flour. Flour is ground up wheat. Wheat is a cereal.

So think of your bowl of cereal as this: you're having beignets in a slightly different form! It's ground up and dried bits of cereal, floating in a bowl of secretions from a cow's lactic system, which were squeezed out by a vacuum assisted tube.

There, feel better?

Truly a staple in New Orleans.

Our favorite hangout was the Morning Call back in the day. Down the street from CDM; fewer tourists, it was more of a locals' hangout.

They've moved out to "The Parish", near Lakeview Shopping Center in Metairie, and we never miss a visit when we're down there.

You can buy the mix and deep fry 'em yourself. Brew up some proper coffee and chicory and you're all set!

Thanks Tom, Now my Thomas' Light Better Start English Muffin along with my Caribou Mahogany Coffee seems more substantial.

Essentially, they are the same...just a variation...every culture has their own style of deep fried dough or batter. My grandmother used to make what she called spritzkuchen...deep fried dough she would sprinkle with powdered sugar. If she decided to make big round ones and fill them with jam, she called them donuts! I used to help fill the donuts with jam using a spoon. For Thanksgiving or Christmas, she'd make hundreds of spritzkuchen and donuts...along with the rest of the feast! Great memories and great food.
 
My dot has been asking for those things since she saw Disneys "Princess and the Frog" (500 times) the main character is a cook, and her specialty is beignets. I'm gonna wind up making some ( they look delicious) but not till I get this rotten tooth fixed.
 
I gotta get back to the French Quarter. I've lost a little weight this past year, so I have a little room for at least a short visit now! Other than the great taste, what I remember about beignets is don't accidentally snort some of the powdered sugar when you take a bite, and then sneeze as a result. It makes quite a mess!

Yep, my Grandpa always told us that you can tell who the tourists are by the amount of powdered sugar they had all over their clothes!
 
It's the coffee that gets you. Cafe Au Lait. Coffee, Chicory, and boiled milk. With plenty of sugar to offset the taste of the chicory. Chicory root is roasted and ground like coffee. A coffee extender, if you will. From the old days. Gotta have lots of sugar or it's bitter. Or just dunk your beignet into it. Gotta love it.
 
I used to go to Cafe' Du Monde every morning for breakfast when I lived in the quarter.
