Ditching bacon grease in favor of olive oil. Cooking a pork loin right now. Took some olive oil, a bit of butter, fresh basil, rosemary and garlic (finley minced/pressed) a TINY bit of bacon grease,Tony C's and another herb pack, mixed 'em all together and heated in the microwave then injected it all into the loin. I then browned the loin in olive oil once I rubbed it down with garlic and Tony C's. Threw some onions in to carmelize. Once brown, I placed the loin over a bed of onions in the crock pot, drizzled injections leftovers on it (rubbed in a bit too), put the carmelized onions from the pan on top the loin then dumped my browning oil around the sides, deglazed the pan and added that too. Smell great and it aint even cooked yet.
