I have NO actual musical experience, but how does a 5 string bass work?
This question has been bothering me for a couple of years.
So far I have not heard any explanations I can understand.
 
It just gives you a wider range of notes. A "standard guitar" has six strings, but you can get 7 or 8 stringed guitars as well.

Would the music played have to be written to reflect the instruments?
Or is it just Jazz???

Talented musicians can play a four or five string bass, a four or five string banjo, etc and adapt to the instrument. More intermediate musicians need to have the music written for what instrument they have in hand. The same can be said for instruments in different keys.

I went to a concert last night in Irving, TX right by Dallas. It was for someone I had not heard of before named Yungblud, but I have a friend who really wanted someone to go with her. Anyway, both he and the opening act, The Warning, were decent bands and his cover of "Changes" was excellent.
