I'd like to swap out my starter for a high torque starter. Do I need to do the polarity switch to negative ground before I put that type of starter in?

Since you've jumped in here feet first, WELCOME!

This will be my personal opinion, so get out the salt grains: As far as the starter swap goes, good idea. Swapping polarity is equally good. The only issue there will be the tachometer, it needs to be "converted." Plenty of how-to info on that and more here. Another advantage of making the polarity swap is that an alternator can be easily sourced/fitted.

All that makes the MG much more reliable.
