I don't think there has been a "what's for dinner" thread in a very long time so... here we go.
Shakshuka - a north African stew based on red / green peppers, olive oil and tomato sauce with eggs cooked in it. In this case I added eggplant and a salty white cheese crumbled on top. Yum.

Our Shakshuka uses heirloom tomatoes which are rare to find cept summer time
 
Just tried this recipe over the weekend. Amazing - but you have to like garlic!!

 
LOL the eggplant was not a huge success here either...
Ship any leftovers over here! It sounds and looks delicious to me. Currently "batchin' it" as Herself has gone to visit her mum for a week, so my menus are eggs fer breakfast and mostly "tube steaks" for dinner. T'morrow is Veterans Day here, so for the price of a ten mile round trip I can eat a free BBQ meal. Lookin' forward to that.
 
1/2 Batching it here as well, Mrs. JP came down with Covid yesterday so the bedroom is an isolation ward and food offerings are umm limited. :rolleyes2: - fortunately the symptoms mostly seem like a bad cold so far.

Our Shakshuka recipe
We use Heirloom tomatoes in it instead of the canned plum and use a Queso Freso instead of the feta (We're not fans)
