"Who's your mama, are you Catholic and can you make a roux?"

The title of a typical Cajun cookbook. My son, who is exiled in Phoenix :smile:jester:smile:, called me about how to make <span style="font-style: italic">Red Beans and Rice</span>, a Cajun staple. I gave him the old recipe and we got off onto making a <span style="font-weight: bold">Gumbo</span>. The local newspaper had an article from a Phoenix chef that talked about making a gumbo. His recipe for roux was for 10 minutes for a light roux, 20 minutes for a medium roux and 30 minutes for a dark roux. <span style="font-style: italic">Meh Dam~</span>! Any good Cajun knows that you cook a roux for at least 2 hours and when the whiskey bottle is empty, the roux is done!

We talked about coffee, ya'll wanna get into a food discussion? We cook good down here. Between the Creole and the Cajun influence, life is good.
 
I just love reading these food posts on a cold winter day.

We live in NE and it's a hodge podge of Yankee, Italian, Polish, Greek, Portuguese, Irish, Chinese, Japanese, Thai and a ton of others. I love them all.

So much food, so little time at the table..........

I have been working and gaining weight in Baton Rouge for a month now. Yes you are correct you can find soom good food down there. Found some good I'm sure this is not how you spell it Boux Dain sausage. As they would say SLAP YO MAMA!
I had never had it before one of the contractors brought a bunch to the plant one morning along with some little spicy round balls of rice excelent!! Not sure why every living soul in LA. dont weight in access of 3 bills! :smile:

Whoever made a decent roux in less than 2 hours?!?!

An absolute impossibility. Like threadin' a needle with yer... umm... butt cheeks. Yeah, yer butt cheeks. :devilgrin:

You've convinced me a decent roux can't be made in less than 2 hours. It'll take me at least that long to get the visual out of my mind that you just put in there!

:banana: As you can see I live in New Mexico. I just recently ordered and received the following: Linquica, Chouric, Farmer's Cheese - both Andrulis and Friendship, real fava beans, B&M Brown bread and horseradish. Bet that tells you I was once a New Englander... For breakfast this morning I had linquica and eggs and home fries, my absolute favorite. :banana:

Talk about bringing a thread to a skreetching halt! Like you, Randy, I am still trying to get the taste out of my mouth. Only in Florida, only in Florida..... :crazyeyes:
