, called me about how to make <span style="font-style: italic">Red Beans and Rice</span>, a Cajun staple. I gave him the old recipe and we got off onto making a <span style="font-weight: bold">Gumbo</span>. The local newspaper had an article from a Phoenix chef that talked about making a gumbo. His recipe for roux was for 10 minutes for a light roux, 20 minutes for a medium roux and 30 minutes for a dark roux. <span style="font-style: italic">Meh Dam~</span>! Any good Cajun knows that you cook a roux for at least 2 hours and when the whiskey bottle is empty, the roux is done!
