Herself made up a batch of Mexican bean dip yesterday, we took some with us to friends' house to glom down as we watched the Buccaneers get their tails whomped. What was left here has just become a tasty AM snack! *burrp*

High energy stuff. Mebbe I'll toss together some nachos fer lunch... /bcforum/images/%%GRAEMLIN_URL%%/laugh.gif

Refried beans are a staple for b'fast! Try 'em with warm tortillas and some white Mexican cheese.

When I was a kid, there was a Mexican family that lived down the street from my grandmother in San Antonio. I'd go over for breakfast, and Mamacita would fix homemade tortillas with refried beans on top, and plopped a couple fried eggs on top of that! WOW! Was that GOOD!

I'm startin' to get hungry again... Got some tortillas inna 'fridge right now! /bcforum/images/%%GRAEMLIN_URL%%/smirk.gif

STOP IT you guys /bcforum/images/%%GRAEMLIN_URL%%/wall.gif /bcforum/images/%%GRAEMLIN_URL%%/wall.gif Darn I hate diets and especially low sugar ones.

So farI'm still able to live the life of an omnivore. I know I'm lucky and it may not last, so if it gets set in front of me and even remotely appears edible, it's GONE!

I learned a bit O Mexican cookin myownself when I was batchin it down in So. Texas. I have a recepie for some stuff called carne guesada Put it in a bowl an eat it or make taquitos out a it ....... goes really well with Texas style beans and sausage. Breakfast taquitos are the norm down, there there are about a zillion ways to make em.
If anyone wants to try the carne guesada here the soup.
one onion diced
one green pepper diced
one level teaspoon of cumin or camino {same same} More = hotter
one dollop of minced garlic {your choice as to how much if any}
Two cans of tomatoes and green chilis {rotel brand here}
I use one hot, one regular, {it comes in different variations of heat} Be sure to pour in the juice too
salt N black pepper {to taste}
One large package of stew meat, Brown in fry pan with small amt of olive oil {you can dice up steak if you rather}
Put everything in a adequate pot with three cups o water {you may have to add water if meat isn`t done.}
boil with no lid until liquid is all but gone or meat is tender. serve any way you like Make tacos or whatever. goes good over rice too.
enjoy

The wife and I went to San Diego to visit my in laws and the following morning it was suggested we all go to a restaurant for breakfast. I was all set for eggs, potatoes, sausage and rye toast. You know, the normal American breakfast! When we got to the restaurant, I found out that they had NO eggs, NO potatoes, NO Italian sausage and NO rye toast. Only hot spicy Mexican stuff. FOR BREAKFAST? I had a cup of coffee. Later we stopped at a Burger King of all places and I put something in my stomach that didn't burn from beginning to end. If you get my drift.

This'll put poor Will into apoplexy, BUT:

Just finished off a breakfast of eggs 'n toast, coffee and a HUGE piece of bro-in-law's smoked salmon... he gave me a whole fillet and it WAS simply scrumptious! *burp* /bcforum/images/%%GRAEMLIN_URL%%/devilgrin.gif

Fried eggs, sausage (bangers!), bacon, fried tomatoes, fried bread (don't knock it if you ain't tried it), and black pudding. Kidneys and baked beans optional.
