Has anyone used a seam sealer of some type in place of the glazing rubber when installing a new glass into the frame? Aside of not being original I can't really see why this method would not work.

I'd stick to the proper glazing rubber because it is consistant thickness on all 3 sides which all bear on the glass.
 
I agree with Luke. Don't use sealant. In fact I would recommend 3M EPR tape. You just build up enough layers (it's 30 mils thick) on your clean windscreen glass to center it snugly in the frame. When finished, trim with a sharp razor.

P.S. Don't use PVC electrical tape. This stuff is epr rubber.
