My daughter is in need of a mechanic that she can entrust her TR7 to. She lives in Santa Fe, NM, but would consider towing it a distance for the right kind of service. Namely, not the kind one would take their cow to the bull for. Any thoughts on this would be greatly appreciated.

Call these guys in Albuquerque: Taos Garage (yes, confusingly named, but they are located in Burque). Ask if they can recommend any shops up in Santa Fe.
